A round oven heats up much faster due to the circulation created by the shape. They can reach the high temperatures necessary for a good pizza and maintain the temperature for long periods of time. It is designed to have a fire on one side and food on the other. A round, spherical dome bounces heat evenly on the cooking floor so wherever the food is placed within the oven it will cook uniformly as there are no hot or cool spots.
So if you are building your own brick oven, just how do you create the perfect round dome? You could try and build it freehand! Or maybe use a trammel, or perhaps make your own template.
