The big Daddy of BBQ smoking!
The Indianapolis is a huge, heavy duty Western style BBQ Smoker. The main cooking chamber has a grill surface of 97.5 x 44cm with two separate steel lids about 5mm thick. Both lids have a built-in thermometer so you can easily monitor the heat inside the chamber.
The fire bowl of the main chamber is approximately 4.5mm thick and can hold up to 4kg charcoal, whilst the side chamber will hold up to 2kg charcoal or wood.
It is suggested that you use a mixture of wood and charcoal in the side chamber for a better, longer burn. Wood pieces about 7-10cm long and between 2.5 and 5cm thick are best. You can experiment with different woods, though beech and fruitwoods are well suited to smoking.
Mounted on a trolley with two large steel wheels so you can manoeuvre this 155kg goliath, there is a solid bottom rack, a foldable shelf in front of the cooking chamber with handy tool hooks and even a bottle opener!
The side chamber has an integrated four level height adjustable lid holder, a bracket for a pot holder (pot and holder not included) and removable ash pot. All cooking grids are enamelled cast iron and the smoker has a heat resistant finish, up to 600°C.
You can choose to grill in the traditional BBQ way, over hot coals with the lid open or to employ a method favoured by many BBQ gurus, indirect grilling where food is cooked in a closed chamber not straight above hot embers. Last but by no means least, you can utilise the side chamber to smoke your food, injecting some additional flavour to your food, whilst maintaining its succulence, thanks to the slow low temperatures used.
