Precise quantities of hardwood chippings are bound together at controlled pressures and densities to form Bisquettes. Smoke flavour is determined by the type of wood being burned.
Bradley smokers burn a flavour bisquette once every 20 minutes. Smoke is produced initially as the wood starts to burn. If it were allowed to generate sufficient heat to keep burning it would tarnish the smoke flavours so is ejected before this stage.
