Bisquettes are produced by binding precise quantities of hardwood chippings, at controlled pressures and densities. Flavour of the smoke is governed by the type of wood being burned.
Bradley smokers burn a flavour bisquette once every 20 minutes. The smoke flavour is produced initially when the wood starts to burn and is ejected before it reaches a high temperature and tarnishes the flavour.
