Smoking food is very simple..... When smoked over long periods of time, even the toughest cuts of meat just fall apart to the touch. Smoked foods yield incredible flavour and are always tender and delicious.
When smoking food, you want to slow down the cooking process, so relax, its not like grilling (constant turning and prodding) in fact, avoiding the temptation to fiddle with your food when smoking, often results in better tasting food, also it affords the outdoor chef more time to enjoy the company (dont worry guys
you can still pretend to be busy by tossing on a few wood chips every now and then
. A book on the art of looking too busy to do any chores will be available as soon as I get a break from my very busy schedule!) You will want to cook food at temperatures of between 200°F - 250°F. You can smoke any type of food
..from vegetables to large joints of meat, even whole turkeys and on a relatively small unit you can cook a load of food (if we remove the feathers, we can get 8 chickens on a Brinkmann Smoker
Our range of Food Smokers incorporate many innovative features making them easy for you to use. Some of the features and other food smoking terms:
Low and Slow......
What gives smoked food its smoky flavour--what causes the smoke and how does it work? Smoking is a "low and slow" method of indirect heat cooking. Because you are smoking the meat or fish at such low temperatures, it never has an opportunity to become overdone. If pork is cooked safely to 160 degrees F, it's difficult to overcook it and dry it out when you are smoking it at 200 degrees F. In fact, smoking a pork butt can take 18 to 24 hours to get the meat to fall apart, but the meat will neither be dry or overdone. It's a completely different style of cooking!
There are many types of Food Smokers available, ranging in price from about £50 up to thousands of pounds, but mostly they yield the same results--quality smoked food. For home use, a £100 £150 smoker will suffice for all round use. The main difference between smokers is their storage capacity. There are also different smoking methods. Some smokers are electric, some use water and steam, and still others use charcoal and indirect heat.
Our Food Smokers are fantastic all round value, the Buckeroo has a great storage capacity, with our range you can BBQ, smoke, smoke roast or even get brilliant results from cold smoking.
