cold smoking with both modern and traditional techniques alike.
With hardwood embers and woodchips or dust, the smoker will allow you to gently
hot smoke any meat or fish giving incredibly moist and tasty results. For the traditional smoker,
cold smoking can be achieved if desired by lighting Wood Dust only in the tray and allowing a steady cool smoke to circulate around the large cabinet and staying below 25 degrees.
For the more modern techniques, an option electric heating element can be fitted in seconds. For
Cold Smoking simply place your desired amount of wood dust on the tray and place onto the heating element. By turning the element on low for a minute or two, this will ignite and smoulder the dust produce a gentle cold smoke - this process can be repeated depending on your taste.
For hot smoking - simply put your wood dust on the tray and heat on the element on a low heat, this method produces both heat and smoke for perfect moist results.
All temperatures and smoke density can be controlled by using the vents in the cabinet.

Cold Smoker Tray is available as one of our many options - simply fill (or half fill) with wood dust, once ignited the ingenius designs allows the wood dust to slowly burn producing
cold smoke in the cabinet for around 8 hours. Fill according to your length of smoke.
